Creamy Strawberry Pink Drink Recipe

This Creamy Strawberry Pink Drink is cold, fruity, and packed with real strawberry flavor. It's inspired by the famous Starbucks Pink Drink, but we're making ours a little richer and more strawberry-forward with frozen strawberries, creamy coconut milk, vanilla, and a splash of beet juice for that gorgeous pink color.

There's no need to hull fresh strawberries or hunt down an açaí refresher base. Everything comes together in about five minutes for an easy homemade pink drink that's creamy without feeling heavy and sweet without losing the strawberry flavor.

Ingredients

1 cup frozen strawberries

¾ cup white cranberry-strawberry juice

¾ cup refrigerated coconut milk

2 tablespoons beet juice

½ teaspoon vanilla extract

1–2 tablespoons strawberry syrup, optional

¼ cup freeze-dried strawberries

How to Make a Creamy Strawberry Pink Drink

1. Blend the Strawberry Base

Add the frozen strawberries, white cranberry-strawberry juice, beet juice, vanilla, and strawberry syrup to a blender.

Blend until smooth.

If you prefer a completely smooth drink without strawberry seeds, you can strain the mixture, but I usually wouldn't bother.

2. Make It Creamy

Pour the strawberry mixture and coconut milk into a cocktail shaker or large jar filled with ice.

Shake vigorously for about 15 seconds.

I prefer adding the coconut milk after blending the strawberries because it keeps the drink light and creamy instead of turning it into a thick strawberry smoothie.

3. Pour and Serve

Fill two glasses with fresh ice and add a few freeze-dried strawberries.

Pour the creamy strawberry mixture over the top and gently stir.

Finish with a few more freeze-dried strawberries and serve immediately.

Add the strawberry syrup.

It's optional, but it's one of my favorite additions because it sweetens the drink while intensifying the strawberry flavor at the same time.

You can also blend a few extra frozen strawberries with a spoonful of strawberry syrup to create a thick strawberry purée. Swirl it around the inside of the glass before pouring in the drink for an extra burst of strawberry and a pretty layered pink appearance.

Why Add Beet Juice?

The beet juice is primarily here for color.

Frozen strawberries naturally make the drink pink, but a small splash of beet juice gives it that vibrant, almost too-pretty-to-drink color without artificial food dye.

Don't overdo it. Two tablespoons is enough to deepen the color without turning your creamy strawberry drink into beet juice.

Use refrigerated coconut milk. The carton variety gives you a creamy drink without the heaviness of canned coconut milk.

Don't blend everything together. Blend the strawberry base first, then shake it with the coconut milk. This gives you a lighter, more drinkable consistency.

Adjust the sweetness to your taste. Try the drink before adding strawberry syrup. Your strawberries and juice may already provide enough sweetness.

Serve it very cold. Plenty of ice makes a big difference here.

Easy Variations

Extra Creamy: Add a splash more coconut milk.

Extra Strawberry: Add strawberry syrup or additional frozen strawberries to the fruit base.

Strawberry Vanilla: Increase the vanilla slightly for more of a strawberries-and-cream flavor.

Dairy Version: If you don't need the drink to be dairy-free, you can experiment with regular milk or a splash of cream instead of coconut milk.

Can I Make This Ahead?

Yes. Blend the strawberry base and refrigerate it in a sealed container.

When you're ready for your drink, shake the base with cold coconut milk and ice. Add the freeze-dried strawberries right before serving.

I wouldn't fully assemble it hours in advance because it's much better freshly shaken.

Is this a Starbucks Pink Drink copycat?

It's Starbucks-inspired rather than an exact copycat. The goal is a homemade Pink Drink with more real strawberry flavor and a creamier strawberries-and-cream finish.

Can I taste the beet juice?

You shouldn't. Two tablespoons provides color without overpowering the strawberries. If you're particularly sensitive to the flavor of beets, start with one tablespoon and add more if needed.

Do I have to use frozen strawberries?

They're my preference because they're convenient and give the drink plenty of real strawberry flavor without washing, hulling, or chopping fresh berries.

Can I use canned coconut milk?

I wouldn't recommend it for this recipe. Full-fat canned coconut milk is much richer and can overpower the strawberry flavor. Refrigerated coconut milk keeps the drink creamy and refreshing.

Can I skip the freeze-dried strawberries?

Absolutely. They're mostly there for extra strawberry flavor, texture, and that pretty Pink Drink look.
