Apple Filling

6 large Granny Smith apples, peeled and sliced

¼ cup granulated sugar

2 tbsp all-purpose flour

1 tbsp cornstarch

2 tsp cinnamon

¼ tsp nutmeg

¼ tsp allspice (optional)

1 tbsp lemon juice

1 tsp vanilla extract

2 tbsp butter, cut into small pieces
Egg Wash

1 egg

1 tbsp water
Topping

1 tbsp coarse sugar (optional)
Tip
For a bakery-style pie, use a mix of Granny Smith and Honeycrisp apples. The Granny Smith apples provide tartness while the Honeycrisp apples become soft, sweet, and jammy during baking.
Directions
Step 1: Prepare the Crust
If using Pillsbury Pie Crust, allow the crusts to come to room temperature according to package directions.
If making homemade crust, combine flour, salt, and sugar. Cut in butter until crumbly. Add ice water one tablespoon at a time until dough forms. Divide into two discs, wrap, and chill for 1 hour.
Step 2: Make the Filling
In a large bowl combine:

Vanilla
Toss until apples are fully coated.
Let sit for 15 minutes.
Step 3: Assemble the Pie
Preheat oven to 425°F.
Roll out bottom crust and place into a 9-inch pie plate.
Pour apple mixture into crust.
Dot the top with butter pieces.
Place second crust over the apples.
Seal and crimp edges.
Cut 4–5 slits in the top crust for steam.
Step 4: Add Egg Wash
Whisk together egg and water.
Brush over the entire top crust.
Sprinkle with coarse sugar if desired.
Step 5: Bake
Bake at 425°F for 20 minutes.
Reduce temperature to 375°F and continue baking for 35–45 minutes, or until golden brown and bubbly.
If crust browns too quickly, loosely cover edges with foil.
Step 6: Cool
Allow pie to cool for at least 3 hours before slicing.
