Strawberry Bites
Ingredients dough:
21/2 cups all purpose flour
2 tbsp. baking powder
1 tsp. salt
1 1/4 cup buttermilk
1 stick unsalted butter (shredded)
Strawberry compote Ingredients:
1 pound strawberries
1/4 cup maple syrup
1 tablespoon fresh lemon juice
1 teaspoon vanilla extract
Icing
1 cup of powdered sugar
2 tablespoons of milk
1/2 teaspoon of vanilla extract
Instructions:
Compote:
Add ingredients to saucepan. Place the strawberries, maple syrup, vanilla extract , and lemon juice in a saucepan. Simmer gently over medium heat for 10-15 minutes, stirring occasionally until strawberries soften and break down a bit and sauce thickens slightly. Keep in mind that it will continue to thicken as it cools. Adjust heat as needed to maintain a gentle simmer. Remove the saucepan from the heat and set aside.
Dough:
Combine all ingredients in a bowl until a soft dough forms. Turn the dough onto a clean surface and fold it over itself at least 5 times. Roll the dough into long logs. Cut the logs into bite-size pieces. Roll each piece into a ball. Assemble Dip each dough ball into the compote. Place the coated balls into a 9×9 baking pan.
Bake at 425°F for 18 minutes. Remove from oven and allow to cool for 10 minutes. Drizzle with icing and serve.
