apple pie cookies 🍎🥧🍪
Apple Pie Filling:
Peel and dice 2-3 apples (I used two really big ones so varies on the size). Add to a pan with 2 tbsp of butter over medium heat for 5 mins. Then add 1/4 c brown sugar, 1 tbsp cinnamon, the juice of one lemon& 1 tbsp of water. Allow to simmer for 5 minutes. Then add 1/2 tbsp cornstarch and simmer for an additional 5 minutes.
Assembly:
Use a mason jar lid to cut out circles in store-bought pie dough. Roll out the scraps and cut into even strips (for the top layer). Add a scoop of apple pie filling to the mini pie circles. Top with the pie dough strips. Coat in egg wash.
Bake at 350 for 30-35 minutes.
Brown butter glaze:
Brown 1/4 c butter over medium heat. Once browned, add 1 tsp vanilla extract, 2/3 c powdered sugar, 2 tbsp milk, & 1/2 tsp cinnamon. Add glaze to cooled cookies.
